Ingredients
For the Meatballs
- 250 g of ground beef, pork, or a combination of both
- half a petite onion
- 1 clove of garlic
- salt, pepper
For the Soup
- 1 liter of broth, tailored to your preference
- 1 onion
- 2 cloves of garlic
- a modest amount of butter or oil
- 1 stalk of celery
- 4 potatoes
- 2 carrots
- 1 bay leaf
- a couple of sprigs of thyme
- salt, pepper
- a bunch of fresh greens – parsley, dill…
Crafting the Meatballs: Begin by finely dicing the onion and crushing the garlic, then incorporate them into the ground meat along with a sprinkle of salt and pepper. Thoroughly knead the meat mixture, adding a tablespoon of cold water as needed, until it transforms into a pliable, smooth, and firm consistency. Divide the mixture and shape it into petite balls using moistened hands.
For the Soup Base: Chop the onion, crush the garlic, peel and dice the potatoes, grate the carrots into rustic shreds, and slice the celery stalk. Stew the onions in heated fat in a pot, pour in the broth, and bring it to a gentle boil.
Gently introduce the prepared meatballs into the simmering broth in batches, skimming off any foam that surfaces. Add all the meticulously prepared vegetables, along with the bay leaf and thyme sprigs. Allow the medley to cook until the vegetables turn tender.
Remove the bay leaf and thyme, and season the soup with salt and pepper according to your taste. Present your creation with a flourish, garnishing the finished soup with a sprinkle of finely chopped greens. For an extra touch, consider adding a dollop of sour cream, and don’t forget to savor this heartwarming dish with a bite of crusty bread.
